I have a potluck to go to next week and would like crock pot ideas?
This is for our Cub Scout meeting, and in the past I’ve brought a crock pot full of baked beans, one time it was meatballs, hot dogs another time, and even little smokies with BBQ sauce.
I’m trying to come up with something new (and relatively simple) that kids and adults will both like. I want to do it in the crock pot because I work 3rd shift and need to start it when I get home so it’s done when I wake up and go to my meeting.

Anyway….due to working 3rd shift, I highly recommend you get the cookbook “101 Things to do with a slow cooker” by Stepahine Ashcraft and Janet Eyring. ISBN # 1-58685-317-1 There’s so many recipes in there that are so easy. As for your pot luck, here’s a few ideas that are straight from this book.
Simple Chili
2 pounds ground beef, cooked and drained
1/2 cup dried minced onion or 1 large chopped onion
1 large can diced tomatoes with liquid
2 cans tomato puree’
1 can kidney beans with liquid
1 cup water
1 teaspoon minced garlic
2 tablespoons chili powder
2 teaspoons salt
1 teaspoon pepper
Combine all ingredients in a greased (or use those slow cooker liners, they work great!) 4 1/2 to 6-quart slow cooker. Cover and cook on low 4 – 6 hours. You could do this ahead of time and just reheat prior to your potluck.
Chicken Noodle Soup
5 cups hot water
2 tablespoons instant chicken boullion granules
1 large can chicken broth
2 cups cooked chicken (the Louis Rich precooked strips are great for this…just cut them up)
1 teaspoon salt
15 baby carrots, cut into coins
3 cups egg noodles, uncooked
Combine all ingredients except the egg noodles into a 3 1/2 to 5 quart slow cooker. Cover and cook on low 4 – 6 hours. Thirty minutes before serving, stir in egg noodles. Cover and cook on low heat and additional 30 minutes. Do not overcook.
Cherry Jubilee
2 cans cherry pie filling
1 package yellow cake mix
1/2 cup melted butter or margarine
Spread pie filling in the bottom of a greased 4 1/2 to 6-quart slow cooker. Sprinkle dry cake mix powder over the top. Pour the melted butter over that. Cover and cook on high heat for 2 hours or low heat for 4 hours. Serve with vanilla ice cream or whipped topping.
